Preserving the techniques of centuries of family farmers and diffusing these practices and techniques through our teaching efforts is one of our primary missions. We host passionate students from around the world of all ages who, by learning traditional methods, bring new techniques to their home regions. These techniques represent innovations that have existed only at a local level here in Molise, but that are capable of solving local needs in different parts of the world where they are unknown. 

Cheese Making

We love teaching traditional cheese making. If you are a beginner, professional or interested in apprenticeship, we have the program for you.

Sheep Herding

It may seem like a simple task however, there are many nuances to herding sheep that make a great difference. We can teach you how to herd with or without horses and dogs, tips and tricks that make working with sheep easier and an all-round shepherding experience.

Milking Sheep & Cows

Breeding animals for meat is very different than for dairy. There are many things to know and prepare for to ensure successful products and a healthy herd. We share our vast knowledge and many years of experience. Our class offers students a hands-on experience within our dairy operation. 

Traditional Cooking

Come to learn the many traditional ways of making, cooking and preserving foods. We offer a wide variety of classes that cover specific dishes and/or methods. 

Preserved Meat Making

During our Winter we make cured meats ranging from prosciutto, capocollo, pancetta, salsiccia and many more. We teach you the entire process so you can go home confidently to make your own.
